Low Fat Vegan Pasta Salad

 

INGREDIENTS

250g elbow macaroni pasta
1/3 cup mayonaise (I used Praise 99% Fat Free)
1/3 cup red capsicum, finely diced
1/4 red onion, finely diced
1 Tbsp pickles, diced
1 Tbsp pickle juice
1/2 Tbsp dijon mustard
2-3 tsp raw sugar (or your sweetener of choice)
freshly cracked pepper
optional: 1-2 ribs of celery, finely sliced (I omitted it as I despise celery)

DIRECTIONS

Cook the pasta as per the package directions, drain and allow to cool
Mix all of the other ingredients together before combining with the cooled pasta
Prepare the night before so it has time for the flavours to meld in the fridge

Serves 4 (as part of the garbage plate)
